South Korea Releases Requirements for Classification and Labeling of Processed Meat Products
On September 8, 2015, South Korea issued a notice to divide processed meat products with different meat content into six categories, including ham, raw ham, pressed ham, and sausage, according to product processing and ingredient specifications. The main categories include:
1, ham and raw ham meat requires meat content of more than 90%, the use of meat or other food, the right amount of food additives to manufacture, processing;
2, pressed ham requires meat content of more than 85%, starch below 5%, the use of meat or other food, add appropriate amount of food additives manufacturing, processing;
3. Mixed ham requires meat content above 75% and starch below 8%. Meat or other foods and appropriate amount of food additives are used for manufacturing and processing;
4. Sausage requires meat content to be above 70% and starch content to be below 10%. Add finely ground meat to other foods and add appropriate food additives for manufacturing and processing.
If it contains specific ingredients such as chicken, it needs to be indicated on the label.
